Today is leftovers. Rice and beans with some tomatoes. Pizza cheese stick, sour cream and onion chips, pickled okra, applesauce and a Greek yogurt protein bar.

Breakfast for lunch!?
okay, so here is what i did for my husband's lunch. I had pancakes today so i made extra for tomorrow. Then i thought what else could be good with that? So, I sliced up some of my homemade bread made from this link here, added apple butter, syrup and applesauce and he is ready to go! :D

January 14 lunch
For dinner I made stuffed peppers. With the leftovers I made lunch. I put the tomato sauce and seasoned rice on an enchilada. I added cheese and wrapped them up. For others I added in carrots and peppers.
Egg mold
This is the result of clever thinking and hours on Pinterest/YouTube. I have told you how to do the hotdogs before and rice is always easy and filling ;) I made meatloaf muffin cups due to not having the dishes done lol! And peppers and carrots. The mold: I used one large egg boiled it ten minutes. Placed it in cool water 10 minutes, broke the shell off and put it in the car mold. I then put that into cold water and into the fridge for half an hour.

Rice and bean burrito
Alrighty! It's been a rough few days, so today I vowed to not let it effect me! For lunch we will be having mini burritos! I boiled rice and in a small pan sautéed onions, cumin, red kidney beans, corn, and then added in the rice. They are rolled inside a tomatillo lime tortilla. I skewered them with tooth picks to not fall apart. Pears. A pizza string cheese stick. A yogurt

Bento for the first day back from holidays
This is our first day back from the holidays with kids so here we are! Tortilla turkey and cheese wraps. Raisins, ants on a log, celery and carrots. Yogurt :)
